Shrimp Scampi

Since my first cooking club recipe worked out so well....I was really excited about the next recipe. The second recipe I chose to broaden my cooking horizon was Shrimp Scampi by The Pioneer Woman.

I have to admit this was only my second time cooking with garlic and since it was such a primary ingredient of the recipe was nervous. However, it turned out to be very easy to use.


After sauteing the onions and garlic in butter I added the shrimp and a little wine and lemon juice. I also added some cayenne pepper. I loved the extra kick that the pepper added.


To finish it off I added some pasta that soaked up some of the yummy sauce.


I will defiantly make this recipe again. It was super tasty!!!


Chicken Tortilla Soup

So I have joined a cooking club, Sweet As Pie Cooking Club. I am hoping this will help me broaden by cooking horizons.

Each month several member of the club will choose different recipes for the Pioneer Woman Blog or cookbook.

For my first cooking adventure I chose Chicken Tortilla Soup from the Pioneer Woman blog. I have to say the soup turned out great.

Brandon is not a huge soup fan....so I added more chicken to make it hearty. It worked. We loved the soup. Next time I think I will add the spicier Rotel to spice it up a little.
